Meatless Tamale Pie

Recipe By : Real Food for Real People
Serving Size : 8     Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 large Onions -- diced
4 large Carrots -- peeled and chopped
6 cups Vegetarian Refried Beans -- (3 cans)
1 pound Corn, frozen
8 ounces Tomato Sauce
1 tablespoon Cumin
1 tablespoon Chili Powder
3 cups Corn Muffin Mix -- prepared as directed

Saute onions with carrots in a large skillet. In a large mixing bowl, combine with
refried beans and corn. Stir in tomato sauce, cumin and chili powder. Turn into
large baking pan or casserole dish (prepared with non-stick cooking spray). Top
with prepared corn bread batter. Bake 30 minutes (or until knife inserted into
corn bread topping comes out clean) at 350 degrees F.

Per Serving (excluding unknown items): 422 Calories; 8g Fat (15.9% calories
from fat); 15g Protein; 75g Carbohydrate; 16g Dietary Fiber; 0mg Cholesterol;
1404mg Sodium.

Exchanges: 2 1/2 Grain(Starch); 1/2 Lean Meat; 1 1/2 Vegetable; 1 Fat; 2 Other
Carbohydrates.

I am looking for a couple recipes - these are made in my college cafeteria - but
no one will part with the recipes! I prefer recipes that are tried tested and true and
not too hard to make!

First recipe: Croissants....they make a variety but my favorites are the
ham/cheese croissant and the spinach/feta croissants

Second recipe: Pizza swirl buns - they actually are in the form of a cinnamon
bun, but with pizza sauce, meat and cheese - they are to die for!

I'm looking for advice as to how to make bread bowls for soups. I've used very
basic recipes I've found on allrecipe.com and other sources and all the bread
seems to do is to flatten out and not rise very much at all, almost as if they are
too tired to rise. (I've tried at least 3 times) I use a jelly roll pan to bake them
and put about 4 lumps of dough on the pan with cornmeal underneath. After doing
so, I let them rise for over an hour or two. Any ideas? Thank you-

Does anyone have a recipe for Huevos Rancheros casserole. I had this recipe in
Reno, Nevada, at a casino breakfast bar. It is absolutely wonderful and very
moist. If you have the recipe, please share it with me. Thanks,

AMMONIA COOKIES

1 cup milk
One-half ounce ammonium carbonate
One-half cup shortening
One and one-fourth cups sugar
1 egg, well beaten
One-half ounce oil of lemon or 1 ounce lemon extract
5 cups sifted enriched flour

Preheat the oven to 350°F. Add the milk to the ammonium carbonate and let
stand for 30 minutes, stirring frequently. Cream the shortening and the sugar; add
the egg, lemon flavoring and the milk mixture. Stir in the flour. Chill. Roll the
dough to one-fourth-inch-thick on a floured board. Cut into 3-inch squares. Prick
with a floured fork. Bake on a greased baking sheets at 350 degrees for 15
minutes or until slightly browned.

Note: Ammonium carbonate is no longer readily available in stores. It can be
special-ordered by many druggists, and sells for about $1.75 an ounce.
Commercial bakeries use ammonium carbonate as a dry rising agent for various
products, and may be willing to sell small batches to the public on request.

In an effort to help LeEllyn, I googled under 'ammonium carbonate' (NH4)2C3,
'beet cake', and 'ammonium carbonate recipes' to no avail. I did find a
measurement that she may find useful --

1/8 tsp ammonium carbonate equals 1/2 tsp baking powder.

16 ounces extra lean ground beef -- (gr. round)
1/2 cup chopped onion
2 cups Cole slaw mix
1 cup tomato sauce
1 teaspoon yellow mustard
1/4 teaspoon black pepper
2 tablespoons brownulated Sugar (made by Domino sugar)

Brown beef and onion; drain. Stir in Cole slaw mix; cook until tender. Add
remaining ingredients; simmer ten minutes.

WW123 - 1 serving (about 3 ounces) = 3 points

MANDARIN SALAD

¼ cup sliced almonds
1 Tablespoon plus 1 teaspoon sugar
1 bunch red leaf lettuce, washed, dried, and torn into bite-size pieces
(I use small head red leaf and romaine heart mix)
2 medium stalks celery, chopped (about 1 cup)
2 green onions, with tops thinly sliced
1 can (11-ounces) mandarin orange segments, drained
Sweet-Sour Dressing (recipe follows)

Brown almonds and sugar over low heat, stirring constantly, until sugar is melted
and almonds are coated; cool on plate then beak apart. Shake together all the
dressing ingredients in a tightly covered jar and refrigerate till needed. In salad
bowl toss together lettuce, celery, onions, oranges, and almonds. Pour dressing
over mixture and toss till well coated.
Serves: 6 to 8

SWEET-SOUR DRESSING

¼ cup vegetable oil (I use olive oil)
2 Tablespoon sugar
2 Tablespoons vinegar
1 Tablespoon snipped parsley
½ teaspoon salt
Dash of fresh ground pepper
Dash red pepper sauce

Note: Dressing can be made a heard of time and kept in the refrigerator.
